Today I had the joy of arranging flowers. For those who don't know I went to school for floral arranging. I don''t get to do it much now but one day I hope to have a big flower garden. I've lost so much of what I had learned. These flowers were so beautiful. I had to share the photo.

Pasta Night!
For sometime now I've thought I should share some of my recipes. This one I came up with when I cleaned out the fridge.
Spinach ( a bunch)
Onion (used half an onion)
Celery (2 sticks)
Mushrooms ( used 6 good sized ones)
Garlic (6 or so cloves)
Fresh Parsley ( like two tablespoons)
One can of diced tomatoes ( we like the sweet onion and garlic)
About 4oz. of Italian cheese ( we used Provolone)
1 half pint whipping cream
Chicken ( I used 2 chicken breast and cut them into tenders.)
Pasta
Salt and pepper
Note: you can use as much or little on the vegetable and herbs.
Put some oil in frying pan (I use olive oil) and cook the chicken, add a little salt and pepper. Chopped the spinach, celery, mushroom, parsley and dice the garlic and onion. Add all this and let it cook down. I added a little of the juice from the diced tomatoes and let it cook off. Add your tomatoes, you may want to drain a little of the juice and whipping cream and cheese and let it keep cooking. Remember to keep string your sauce. The sauce will get thicker the longer it cooks. Cook your pasta, pour your sauce over the pasta and enjoy!
We loved this and hope you will give it a try. Sorry, no picture of it done. If any question or if the recipe is not clear give me a call, I would be happy to help. Happy cooking!
